Karen Nevins is a Senior Business Development Manager at Nixon Peabody, a full service law firm based in Boston. Karen’s role at Nixon Peabody is focused on developing new business, expanding the scope of existing client engagements, and analyzing industries to identify new areas of opportunity. Karen works closely with the firm’s Food, Beverage & Alcohol practice as well as its Intellectual Property practice. Karen has an extensive background in strategy development, marketing, product development, and business development and has previously worked at several start-up companies focused on the education/technology space. With respect to her educational background, Karen has a B.A. in Spanish and an MBA with a concentration in Marketing.
What compelled you to get involved with Lovin’ Spoonfuls?
The organization’s mission was particularly appealing to me. Hunger relief has always been an issue that is near and dear to my heart. Lovin’s mission of rescuing food that would otherwise be discarded and providing that food to people in need, is beautiful in its simplicity. On top of addressing the issues of hunger and food waste head-on, the organization is also doing good for the environment by keeping food out of landfills.
What resonates with you about the LS mission?
I wish I had seen this question before I started typing my answer to the question above 😉 My answer to this question is the same as above.
What do you enjoy cooking at home?
Even though I’m not trained as a chef nor do I work as a chef, I do consider myself to be a pretty darned good cook and really love toiling in the kitchen. There’s nothing more rewarding than cooking for my family and watching my children enjoy a meal that was made with love.
What’s your favorite food?
Hmmm…..my favorite food?? That’s a tough one to answer because there are SO MANY foods that I adore. I love a perfectly cooked lobster drizzled in butter – it’s nothing short of heaven on earth. I love a mango, at its perfect ripeness, with chunks of fresh avocado and lime juice squeezed on top of it. My down fall, or more accurately described as “my addiction,” is ice cream – I LOVE ICE CREAM!! Ben & Jerry’s toffee/coffee heath bar crunch ice cream is a personal favorite.
Favorite way to use leftovers?
Leftovers are a huge staple in my home. I always cook in bulk so that I can freeze food for later. And certain foods, such as Italian sauce with meatballs, are even tastier as left-overs than they were on the first day they were cooked.
Best Lovin’ moment or experience so far?
Being on Lovin’s Board is an incredibly fulfilling experience. Not only do I get to work with a great group of people, but the commitment of everyone on the team to the organization’s mission is so apparent. My best experience so far was definitely attending the annual Tailgate party. The energy, enthusiasm and support at the Tailgate party was infectious and, of course, there was lots of yummy food on hand! What’s not to like about that?
